ABOUT Thai Noodle Sizzler Chaat RECIPE

"Some days you just have to create your own sunshine". And I'm back with another fusion of sunshine. It's about "Thai Noodle Sizzler Chaat", the name is big and the procedure is big as well and so is the taste. This fusion recipe has the twist and taste of Thai, Chinese and Indian cuisines.

Ingredients Serving: 4

  1. For the Thai Paste:
  2. 3-4 dry whole red chilies
  3. 2 tbsp lemon juice
  4. 2 tbsp dry roasted sesame seeds
  5. 1 tbsp each grated coconut & cilantro stems
  6. 1 tbsp each sugar & oil
  7. 1 tbsp whole dry coriander seeds
  8. 1 tsp cumin seeds
  9. 1 and 1/2 tsp soya sauce
  10. 1 tsp each lemon zest & lemon grass
  11. 1 tsp each chaat masala & pepper
  12. For the Chaat Mix:
  13. 1 cup chopped apple
  14. 1/2 cup each chopped bell pepper & boiled or frozen corn
  15. 1/2 cup chopped tomatoes & roasted and roughly crushed peanuts
  16. 2 tbsp chopped cilantro with stems
  17. 1 tbsp finely grated coconut
  18. 1 tsp each paprika pwd, chaat masala & pepper
  19. For the Noodles:
  20. 2 cups boiled noodles
  21. 2 tbsp chopped cilantro with stems
  22. 1/2 tbsp chopped garlic
  23. 1 tbsp each roasted black sesame seeds & chopped cilantro
  24. 1 tsp each pepper & crushed dry red pepper(chili flakes)
  25. salt to taste


  1. For the thai paste, first soak the dry whole red chilies, cumin seeds and whole dry coriander seeds together for about 30 minutes.
  2. Transfer this into the grinder bowl along with the lemon juice, 1 tsp lemon zest (keep half for later), lemon grass and coconut.
  3. Grind it all together with a little water and make a fine paste. Transfer this paste in to a bowl.
  4. Add the dry roasted sesame seeds, chaat masala, black pepper powder, sugar, salt, soya sauce, 1 tsp lemon zest and oil in to the paste. Mix well and keep the thai paste on the side.
  5. Take another big mixing bowl. Add all the chaat mix ingredients in it and mix it well. Add the thai paste into this chaat mix and keep it aside.
  6. To prepare the noodles, heat the pan with butter. Add the chopped garlic and let it turn light brown in color. Next add the boiled noodles in it.
  7. Add the black pepper powder, crushed dry red pepper, roasted black sesame seeds, chopped cilantro and salt. Mix it all well and turn off the stove.
  8. To serve, heat the sizzler plate well and arrange the noodles on it. Put the chaat mix on it.
  9. For sizzler smoke, add few drops of vinegar and some butter on the hot sizzler plate after arranging it all. (optional)
