ABOUT Homemade Cream Cheese... RECIPE

Easy homemade cream cheese that can be made without much hassles. This recipe makes 1 cup of soft and fresh homemade cheese. I personally prefer vinegar but lemon juice also works absolutely fine. One can double or triple the recipe. Smooth and lovely texture cream cheese can be made even at home and is infact much better than the store bought one.

Ingredients Serving: 4

  1. Full fat milk 1 litre
  2. Lemon juice 4 tbsp
  3. OR
  4. White vinegar 3 tbsp
  5. Salt 1 tsp

Instructions

  1. In a heavy bottomed cooking pot, bring milk to a rolling boil.
  2. After it starts boiling, lower the flame and simmer.
  3. Keep adding vinegar or lemon juice one tablespoon at a time.
  4. Keep stirring it.
  5. After all the vinegar or lemon juice is added, keep stirring it until you can see it curdling and blobs of cheese floats on top.
  6. Lay a sieve over a cheesecloth in a bowl and drain the curdled milk.
  7. Let it drain fully and cool down.
  8. Now process this curds in a blender until creamy.
  9. Add salt at this stage.
  10. Herbs or garlic flavours can be added at this stage according to one's liking.
  11. Store this cream cheese in the refrigerator and use within 7 days. It keeps good upto 15 days too. But it should be kept refrigerated in an airtight container.
