Addition of peas adds a wonderful flavour and texture to baingan ka bharta. One of my favourites served best with paranthas and raita.

Wash and then wipe the brinjal dry.
Roast the brinjal on a gas burner.
Meanwhile, in a wok, heat up the oil.
Add onion and sauté till translucent.
Add peas to it and sauté for 1-2 mins.
In a blender jar, make purée from the tomatoes and add it to the wok.
Add salt, chopped green chillies and red chilli powder.
Sauté till tomatoes leave oil.
When the brinjal is roasted , add it to a bowl of cold water and peel it.
Roughly chop the brinjal and add it to the wok.
Sauté for a min and then cover and cook for 2-3 mins.
Mash the brinjal with a masher or back of the spatula.
Sprinkle garam masala powder and green coriander.
Serve hot with your favourite parantha/ roti.
