ABOUT Litti Chokha RECIPE

Whenever we talk about Bihari cuisines, Litti Chokha is one of the first recipes that comes to our mind. Traditionally, Litti is cooked on cow dung cake fire slowly and patiently to give it a pleasant and smoky taste. The roasted Litti is served with ghee and chokha ( which is made of boiled potato, roasted brinjal and roasted tomato). The availability of cow dung cakes would not be an easy task for people living in metropolitan cities. Hence, I shall discuss the roasting process of Litti on gas stove.

Ingredients Serving: 2

  1. Wheat flour- 300 gm
  2. Mustard oil- 6 tbsp
  3. Chopped Ginger- 1 tbsp
  4. Garlic 1 tbsp
  5. Red chilli powder- 1 teaspoon
  6. Salt as per your taste
  7. Lemon- 1 piece
  8. Green chilli- 2 tbsp (finely chopped)
  9. Onion- 4 large pieces (finely chopped)
  10. Boiled Potato- 4 medium sized or 2 large pieces
  11. Tomato- 2 large pieces
  12. Brinjal- 2 large pieces
  13. Sattu (roasted gram flour)- 150 gm
  14. Coriander leaves- 5 to 6 tbsp finely chopped

Instructions

  1. To make the litti, make a tight and hard dough of the wheat flour (adding milk or water as per personal choice). Take the sattu in a bowl.
  2. Add 2 chopped onion, 2 tbsp chopped green chilli, salt, red chilli powder, lemon juice, coriander leaves, ginger and 1 tbsp of mustard oil.
  3. Make a nice mixture for the stuffing. Also make a small ball of the dough and stuff it with the sattu mixture.
  4. Take an iron grill and it keep on the top of the gas stove. Roast the litti on a medium flame, slowly and patiently. It will take a little time. The roasted balls will have crispy outer layer with soft inner core. Roast all the litti in batches.
  5. To make the chokha, roast the brinjal and tomato on that iron grill. Peel the skin of the brinjal and tomato. Mash all the brinjal, tomato and boiled potato in a bowl together.
  6. Take a pan and add in 4 tbsp of mustard oil. Add the chopped garlic, chopped onion and cook it until it turns light red. Add the mashed potato, tomato and brinjal to the pan.
  7. Add salt and cook it untill it leaves oil. Then add in chopped coriander leaves and the chokha is ready to be served.
  8. Dip litti in ghee and serve it hot with chokha and lemon.
