Mutton Korma

Ingredients to make Mutton Korma

  • Mutton – 500gms
  • curd – 1/2 cup beaten
  • turmeric – 1/4th tsp
  • Kashmiri red chilli Powder - 2tsp
  • salt – to taste
  • tomato paste – 1/2 cup
  • Dry coconut powdered – 4 tbsp
  • green chillies - 3 to 4 slit
  • oil – 1/4th cup
  • onions – 3 to 4 medium sized (made into paste)
  • garlic ginger paste – 1 ½ tbsp
  • Whole garam masala
  • Green cardamom pods 4
  • Brown cardamom – 1
  • cinnamon – 4 small pieces
  • cloves – 4
  • water – 2 ½ cups
  • coriander powder – 1 ½ tsp
  • cumin powder – 1 ½ tsp
  • Garnish
  • Browned onion – handful ( crushed )
  • green chillies – 2 chopped
  • Green coriander – handful finely chopped
  • Garam masala powder – 1/2 tsp

How to make Mutton Korma

  1. Take a pan and add one teaspoon of oil along with peeled and quartered onions and green chilies slit. Saute for a few mins till onions are translucent, then cool them and grind coarsely.
  2. Now take a pressure pan add oil and then add whole garam masala.
  3. After that add onion and green chilli paste, sauté well till light golden then add garlic ginger paste, sauté for a minute then add tomato paste and sauté till fat separates.
  4. After this add mutton and sauté well for 5min and then add dry coconut powder sauté for a min and then add curd while sautéing so that the curd doesn’t get curdled.
  5. Then add salt, red chilli powder, turmeric, dhaniya powder, zeera powder and sauté well till fat separates.
  6. Now add water and pressure cook for 3 whistles or if you are cooking a normal pan, leave on sim till mutton is perfectly done and fat separates.
  7. Here you can also adjust the consistency of the gravy required.
  8. Now add everything under Garnish, cover the lid and put on dum for 5min. Serve hot!

My Tip:

If the mutton is not done after three whistles, you can close the lid and again put on the weight for some more whistles. • For tomato paste, you can use store bought one or fresh tomatoes. If you are using fresh tomato puree, you can use four medium sized tomatoes.
