Ingredients to make Southern Squash casserole

  • 1 1/2 lb summer squash, diced (zucchini & yellow squash)
  • 1 medium onion, chopped
  • 2 Tbsp butter
  • 1 (4oz) can diced green chilies, optional
  • 2-3 Tbsp all purpose flour
  • 1 tsp tsp sea salt
  • 1/2 tsp ground black pepper
  • 1 1/2 c shedded monterey jack cheese
  • 1 egg
  • 1 c cottage cheese
  • 2 Tbsp chopped parsley
  • 1 Tbsp chopped chives - optional
  • 1/2 c grated parmesan cheese

How to make Southern Squash casserole

  1. Place squash, onion and butter in a big enough saucepan and saute until tender; but still crisp. Fold in chilies, flour, salt and pepper.
  2. Place in a greased 2-quart baking dish; sprinkle with Monterey cheese.
  3. Combine egg, cottage cheese, parsley and chives. Layer over Monterrey cheese, sprinkle with Parmesan.
  4. Bake uncovered at 400 degrees for 25-30 minutes until heated through.

My Tip:

I have used a combination of pepper jack, cheddar and monterrey, with great results
