this is my updated version of my mothers' southern squash casserole

Ingredients Serving: 6

  1. 1 1/2 lb summer squash, diced (zucchini & yellow squash)
  2. 1 medium onion, chopped
  3. 2 Tbsp butter
  4. 1 (4oz) can diced green chilies, optional
  5. 2-3 Tbsp all purpose flour
  6. 1 tsp tsp sea salt
  7. 1/2 tsp ground black pepper
  8. 1 1/2 c shedded monterey jack cheese
  9. 1 egg
  10. 1 c cottage cheese
  11. 2 Tbsp chopped parsley
  12. 1 Tbsp chopped chives - optional
  13. 1/2 c grated parmesan cheese

Instructions

  1. Place squash, onion and butter in a big enough saucepan and saute until tender; but still crisp. Fold in chilies, flour, salt and pepper.
  2. Place in a greased 2-quart baking dish; sprinkle with Monterey cheese.
  3. Combine egg, cottage cheese, parsley and chives. Layer over Monterrey cheese, sprinkle with Parmesan.
  4. Bake uncovered at 400 degrees for 25-30 minutes until heated through.
