ABOUT Creamy Lemon Crumb Bars RECIPE

Cold, creamy, citrus-hinted condensed milk filling, that oozes, but is also set in place, sandwiched between a layer of almost granola-like cookie base, and a layer of loose buttery cookie crumbs on top.

Ingredients Serving: 4

  1. 250 gms of Marie biscuits/ digestive biscuits/ Ginger biscuits
  2. about 100 gms of salted Butter softened
  3. 3 tablespoons of Sugar powdered/ caster
  4. Rolled Oats (optional)
  5. 2 pinches of Salt
  6. one can of Condensed milk
  7. A few drop of Vanilla/Butterscotch flavoring (optional)
  8. juice of 2 whole Llemons
  9. Lemon zest about 1 tsp
  10. Oil for greasing

Instructions

  1. Add to food processor and pulse until fine with small chunks or you can place the biscuits in a ziploc bag and using rolling pin crush the biscuits until small pieces.
  2. If you are using oats add it, along with pinch of salt and sugar. Add in softened butter and mix gently using your fingers, till the mixture resembles wet sand. Set this aside.
  3. Take a mixing bowl and lightly grease it. Empty condensed milk can into it. As the bowl is greased, it will be easier to pour out.
  4. Now add lemon juice, one tablespoon at a time along with vanilla/butterscotch flavouring, lemon zest and salt. Taste and add more lemon juice if required. Combine well.
  5. Preheat your oven at 180C. Take a rectangular baking (Borosil) dish with handles and grease it.
  6. Tip half the biscuits mixture in the baking dish. Lightly using your fingers press down to form even base.
  7. To this add in condensed milk mixture, carefully spread evenly using a spoon till all the edges and corners are covered.
  8. To set this, bake for 10 minutes at 180C. Once done, take out from oven and leave to cool. Once the mixture cools down completely, cut into squares, but don’t take out from the baking dish.
  9. Leave this in fridge for 30 minutes and gently take out the squares. Don’t worry if part of crust remains and topping fells off, that’s the fun part of this dessert!

Looks awesome :D But adding 2 whole lemon juices and zest as well? can we lessen the amount a bit?
