ABOUT Tomato and Garlic Fusilli Pasta RECIPE

This tomato and garlic pasta is full of flavour of fresh tomatoes, garlic and Italian herbs . You just cannot miss it! Listening to my cherished music over a bowl of tomato and garlic pasta has been my sublime dream. In this pasta recipe, the inclusion of carrots and capsicum not only increases the nutritive value but also lend their colourful impact. Combine some meats or more vegetables to bump up the nutritive value. As for my family, we love it just this way...

Ingredients Serving: 4

  1. FOR PASTA SAUCE:
  2. Tomatoes 250 gm blanched and pureed
  3. Onion 1/4 cup finely chopped
  4. Ginger paste 1/2 teaspoon
  5. Garlic paste 1 teaspoon
  6. sugar 1/2 teaspoon
  7. Salt to taste
  8. Dried thyme crushed 1/4 teaspoon
  9. Dried basil crushed 1/4 teaspoon
  10. Oregano 1/4 teaspoon
  11. Olive oil 1 tablespoon
  12. Tomato ketchup 2 tablespoons
  13. For pasta
  14. Fusilli (Spiral pasta) 1.5 cups boiled till al dente
  15. Capsicum assorted diced 1/2 cup
  16. Carrots finely chopped 1/4 cup
  17. Cherry tomatoes 5 to 6

Instructions

  1. FOR PASTA SAUCE Take oil in a,saucepan and heat it. Add ginger garlic paste and onions and saute for few minutes.
  2. Now pour the tomato puree into the saucepan
  3. Mix the salt, sugar, thyme, oregano and basil
  4. Simmer for 10 minutes till sauce is done. At this stage you will see oil oozing out from the sides
  5. Put off flame and keep the prepared pasta sauce aside
  6. HOW TO PROCEED
  7. In a skillet heat a little olive oil add the onions , followed by carrots and capsicum. Saute for a while
  8. Now add the boiled spiral pasta and prepared past sauce. Toss gently.
  9. Adjust seasoning
  10. Put off flame and serve at once
