Ingredients Serving: 3

  1. 500 grams mutton mince
  2. 4 pavs
  3. 2 teaspoons caraway seeds
  4. 10-12 green cardamoms
  5. 8-10 cloves
  6. 10-12 black peppercorns
  7. 3-4 blade mace
  8. 2 teaspoons fennel seeds
  9. 3-4 stone flower
  10. 3-4 star anise
  11. 1 inch cinnamon
  12. 1 tablespoon dried rose petals
  13. 1 tablespoon khus ki jadh
  14. 4 kabab chini
  15. 2 black cardamoms
  16. 2 teaspoons chopped garlic
  17. ¼ cup raw papaya paste
  18. 1 cup fried onions
  19. 1 teaspoon red chilli powder
  20. Salt to taste
  21. 1 tablespoon cashewnut-poppy seeds paste
  22. 2 tablespoons saffron water
  23. 2 teaspoons rose water
  24. ½ cup roasted gram flour
  25. Ghee as required
  26. Oil as required
  27. Mint chutney for spreading
  28. Funfoods Mayonnaise for spreading
  29. 4 iceberg lettuce leaves
  30. 4 tomato roundels
  31. 4 onion roundels
  32. 4 yellow capsicum strips
  33. 50 gm Cheese for stuffing in kebab

Instructions

  1. Grind together caraway seeds, green cardamoms, cloves, black peppercorns, mace, fennel seeds, stone flower, star anise, cinnamon, dried rose petals, khus ki jadh, kabab chini and black cardamoms to make a fine powder.
  2. Heat a piece of coal directly on flame.
  3. Take mutton mince in a bowl. Add garlic, raw papaya paste, fried onions, chilli powder, 2½ tablespoons ground spice powder, salt, cashewnut-poppy seeds paste, saffron water, rose water and gram flour and mix well.
  4. ake the mince mixture on a plate and make a well in the center. Place a glass bowl in it, put the hot charcoal in it and pour some ghee on it. Cover immediately and set aside for a few minutes.
  5. Heat some oil on a non-stick tawa.
  6. Divide the mutton mixture into equal portions and shape into patties.
  7. Stuff cheese in each patty.
  8. Place the patties on the hot tawa and shallow-fry from both sides on low heat till golden and cooked.
  9. Halve the pavs horizontally.
  10. Heat some oil in a non-stick pan and roast the halved pavs from both sides till light golden.
  11. Spread some mint chutney on the base of each roasted pavs.
  12. Spread some FUNFOODS mayonnaise on the remaining pavs.
  13. Place a lettuce leaf and 1 mutton patty on the base buns. Spread some mint chutney on top and place 1 tomato roundel and 1 onion roundel, capsicum and cover with the remaining pavs.
  14. Serve hot.
