A sweet snack my mom used to make when we were kids. The same now I make for my son. it s his one of the fav dishes, even now. It s crepe made by maida with coconut sweet filling. This can b taken as an evening snack or give to the kids to school for lunch.

Ingredients to make Elanji.

  • For the crepe
  • maida 1/2 cup
  • coconut milk 1/2 cup
  • egg 1
  • turmeric powder a pinch for colour.
  • salt
  • sugar 1 tsp
  • For Filling
  • Grated coconut 1 cup
  • sugar 1/4 cup
  • kismis a few
  • cashew nuts 4 or 5, fried & chopped

How to make Elanji.

  1. Mix all ingredients given under batter, into a smooth batter, without any lumbs.
  2. heat a pan , add sugar & coconut. stir till sugar melts.
  3. let the filling get cooled a bit. then mix cashews & kismis.
  4. heat a pan.brush a little oil.
  5. pour 1 big laddle of batter& roll like dosa. when one side is done turn & cook the other side without changing colour.
  6. put 2 or 3 , according to ur taste, tbsp of filling inside each crepe & roll it.
  7. after rolling put it again on the pan & turn , make it crispy.
  8. serve hot.

My Tip:

we can use jaggery instead of sugar. avoid egg if u dont want.It s tasty when a bit cold .
