ABOUT Paneer Tikka Masala RECIPE

Paneer tikka masala is a very rich and an exotic dish. The method is really very long as you can see from the list of ingredients. It basically involves two steps, first making of the paneer tikka which you can even enjoy as it is and then making a rich gravy of onion, tomato, yoghurt and fresh cream. The end result makes it worth the effort.

Ingredients Serving: 4

  1. Paneer/Cottage cheese - 250 gms (cubed)
  2. Onion - 1 (large diced)
  3. Tomato - 1 large (deseeded diced)
  4. Capsicum - 1 large (diced)
  5. Roasted gram flour - 2 tbsp
  6. Hung curd - 1/4 cup
  7. Ginger garlic paste - 1 tsp
  8. Turmeric - 1/4 tsp
  9. Kashmiri red chilli powder - 1 tsp
  10. Coriander powder - 1 tsp
  11. Black pepper powder - 1/4 tsp
  12. Garam masala powder - 1 tsp
  13. Lemon juice - 1 tsp
  14. Salt - to taste
  15. Oil - 4 tbsp
  16. Onion - 1 large (paste)
  17. Ginger garlic paste - 1 tsp
  18. Cumin seeds - 1/2 tsp
  19. Tomatoes - 1 large pureed
  20. Cardamom - 2
  21. Cinnamon stick - 1 inch
  22. Cloves - 2
  23. Turmeric powder - 1/4 tsp
  24. Kashmiri red chili powder - 1 tsp
  25. Coriander powder - 1 tsp
  26. Garam masala powder - 1 tsp
  27. Kasuri methi - 1/2 tsp
  28. Yoghurt - 2 tbsp (whisked)
  29. Fresh cream - 2 tsp
  30. Coriander leaves - for garnishing
  31. Salt - to taste
  32. Oil

Instructions

  1. For making the marinade: In a mixing bowl, add ginger-garlic paste, kashmiri chilli powder, coriander powder, black pepper powder, garam masala powder, lemon juice and salt. Mix well.
  2. Heat oil on a high flame, close the flame and add turmeric. Immediately pour it over the marinade. Mix again.
  3. Add in the paneer pieces and the chopped vegetables make sure all get coated well with the masala.
  4. Keep in the refrigerator for at least 2 hours, after that take it out and bring to room temperature.
  5. On a skewer put the marinated paneer and vegetables alternately.
  6. Grill in a preheated oven at 200°C for 15-20 minutes or until the edges of the paneer & vegetables begin to turn brown.
  7. For the gravy: Heat oil in a kadai, add the cardamom, cinnamon, cloves and cumin seeds. Fry till it begins to crackle.
  8. Add in the onion paste and saute till it turns golden brown in colour.
  9. Add ginger garlic paste, saute for a few minutes then add pureed tomato and cook on a high flame for 1 minute.
  10. Add coriander powder, kashmiri red chilli powder, turmeric, garam masala powder and salt. Cook till the oil separates.
  11. Add yogurt. Stir well. Add water and simmer for 5 minutes till the gravy begins to thicken. Adjust the consistency.
  12. Add fresh cream and kasuri methi. Stir well. Gradually add in the paneer tikkas and vegetables and give it a gentle stir.
  13. Garnish with coriander and serve hot.
