ABOUT Bharwan baingan RECIPE

This recipe is inspired from Nisha madhulika’s recipes but is truly a tangy and tasty dish.

Ingredients Serving: 4

  1. 8-9 small brinjals
  2. 1/2 tsp turmeric powder
  3. 1/2 tsp red chilli powder
  4. 1/2 tsp coriander powder
  5. 1/2 tsp fennel powder
  6. 1/2 tsp dry mango powder
  7. 1/2 tsp cumin seeds
  8. pinch asafoetida
  9. 3-4 tbsp oil
  10. salt, to taste
  11. coriander leaves, for garnish

Instructions

  1. Mix all the dry spices in a clean and dry bowl.
  2. Chop the stem of brinjals and mark a cross on top.
  3. Fill in the dry spices from the cross mark, in the brinjals.
  4. Heat oil in a wok and add cumin seeds.
  5. Add asafoetida when the seeds crackle .
  6. Place the brinjals sideways in the wok.
  7. Cook the brinjals from all sides with turning in between.
  8. Switch off the gas and garnish with coriander leaves and serve hot.
