ABOUT Soupy Noodles RECIPE

Soupy Noodles is quick and easy one pot meal. This is very good option for dinner specially in winter and monsoon. My kids love them more than hakka noodles. This is quite healthy and comfort food than noddles.

Ingredients Serving: 2

  1. Noodles, roughly broken- 100 grams (half pack)
  2. Capsicum, chopped- ½ cup
  3. Carrot, julienne strips or cubed- ½ cup
  4. Cabbage, chopped- 1 cup
  5. Mushrooms, chopped- ½ cup (optional)
  6. Soya mini chunks- ½ cup
  7. Ginger, minced- 2 inch piece
  8. Garlic, minced - 8 cloves
  9. Green chilies, minced - 2
  10. Fresh coriander with steams or celery stick, finely chopped- 2 tbsp
  11. Spring onions, green part, chopped– ¼ cup (for garnish/optional)
  12. Red chili powder - ½ tsp or as per likes
  13. Maggi magic cubes (Vegetarian masala) , crushed- 2 packets
  14. Soy sauce- 1 2 tbsp
  15. Chilli sauce- 1 tsp or to taste
  16. Vinegar - 1 tsp
  17. Black pepper powder - 1 tsp or to taste
  18. Water or Vegetable Stock - 3 cups (or as required)
  19. Oil - 2 tbsp
  20. Salt- to taste

Instructions

  1. Wash and cut all vegetables.
  2. Heat a oil in the wok. Add the onion and sauté till it turns pink.
  3. Now add the chilii, ginger, garlic, coriander steams and sauté for a while. Add all vegetables one by one and salt. Sauté over a high flame for 2 minute.
  4. Add crushed magic cubes, chilli sauce, soy sauce, red chilli powder, black pepper powder and mix well.
  5. Add the vegetable stock or water and bring to a boil.
  6. Add soya chunks and noodles and let it cook in the stock till done over medium flame.
  7. Check the seasonings, add salt and pepper if needed. Switch off gas.
  8. Garnish with spring onion greens and serve piping hot.
