ABOUT Maddi or Taro or Colocasia Tuber Fry RECIPE

Colacasia tubers are known as Maddi or Kaale Alvaa in Konkani. Maddi tastes amazing after shallow fried. It is very popular dish in Goa and consumed on regular basis as a side dish with dal rice. Peeling and cutting needs to be done carefully as these tubers can cause itchy hands. Carefully peel, slice and immediately apply kokum water on these slices without touching it. just toss it. Wash under running water and strain them. Season with spices and marinate. In case if you get itchy hands apply some kokum water or lemon juice.

Ingredients Serving: 4

  1. Maddi or Taro Tuber – 1 large.
  2. Thick Kokum Juice (Unsweetened)– 2 -3 tbsp
  3. Garam Masala – ½ tbsp. (Optional)
  4. Red chili powder – ½ - 1 tbsp.
  5. Turmeric Powder – ¼ tsp
  6. Fine Semolina – ½ - 3/4 cup
  7. Rice Flour – 2 tbsp
  8. Oil – 3-4 tbsp.
  9. Salt - As per taste

Instructions

  1. Peel and slice Maddi or Taro tubers into 2/4-inch thickness.
  2. Transfer them into bowl, add Thick Kokum Juice (Unsweetened). Coat well with juice. Use spatula or just toss it while mixing it with kokum water. Keep aside for 15-20 minutes. Wash slices and pat dry.
  3. Add salt, Turmeric powder, garam masala, Red chili powder. Coat well with all dry masalas. marinate it for 30 minutes.
  4. Take Semolina or rava and rice flour in a plate. Dredge marinated slices in the rava rice flour mixture till they well coated from all the sides.
  5. In a non-stick pan drizzle some oil, arrange coated slices. cover and cook on low flame for 2-3 minutes. Remove lid and cook further for 1 minute.
  6. Turn them over and fry from other side. Drizzle some oil on slices. Cover for few seconds. Remove plate and let it be on pan for a minute or so till they become crisp.
  7. Remove and serve hot with dal rice.
