Coconut milk pulao

Ingredients to make Coconut milk pulao

  • jeera Samba rice / Basmati rice - 1 cup
  • coconut milk - 100 ml
  • onion - 3 nos.
  • ghee - 2 tbsp
  • ginger garlic paste - 1 tbsp
  • cashews - 10 nos.
  • pudina /Mint leaves - Handfull
  • coriander leaves - few strands
  • green chillies - 5 - 8 nos.
  • bay leaves - 2 nos.
  • cinnamon - 2 nos.
  • cardamom - 2 nos.
  • star anise - 2 nos.
  • cloves - 2 nos.
  • water - 1 cup
  • salt - according to taste

How to make Coconut milk pulao

  1. Wash and soak rice for 10 mins.
  2. In a cooker , add ghee and sauté bay leaf , cinnamon, cardamom, cloves and star anise.
  3. Add finely chopped onions and saute till golden brown
  4. Add ginger garlic paste and saute till raw smell goes and now add cashews and fry till it's colors changes
  5. Add chopped mint , coriander leaves and slit green chillies
  6. Now drain the soaked rice and give a mix in the cooker with all the ingredients
  7. Pour thick coconut milk to it and give a stir till all combines together
  8. Add 1 cup water , salt according to taste and check for seasoning. Close the cooker lid and cook on medium flame for 2 whistles
  9. Let the pressure settle on its own. Serve hot

My Tip:

Green chillies are the only source for spice in this recipe so add according to your taste preference
