Ingredients Serving: 4

  1. 1 cup Semolina (suji)
  2. 1 cup milk
  3. 1 cup water
  4. Salt to taste
  5. 1 tsp ghee/oil
  6. For the filling: 100 gm paneer
  7. 12-15 raisins (optional)
  8. 3-4 cashew nuts, finely chopped (optional)
  9. 3-4 almonds, finely chopped (optional)
  10. 1/2 tsp green chillies, finely chopped
  11. 1/2 tsp ginger, grated/finely chopped (optional)
  12. Freshly chopped coriander leaves
  13. Black Pepper to taste
  14. Salt to taste
  15. Oil for frying

Instructions

  1. Add ghee/oil in a pan. Once its warm, add the suji and fry for 2-3 mins on a low heat. The suji should not change color. Then add salt, lesser than what should make an ideal taste. Mix the water and milk together.
  2. Now add this to the suji mixture and keep on stirring. Within minutes it will turn into a dough. Once it is becomes like chapati dough, turn off the gas and cover the mixture.
  3. Set aside for a few minutes until cooled to room temperature. Once cooled mix it with hands to make the mixture smooth. Crush paneer and add all the ingredients, mix it well. Take a small portion of the dough, make a ball of it and press it.
  4. Fill up a spoon of the filling mixture in it and close the ends to form a ball. Give it the desired shape. You can make any shape of your choice. Make all the cutlets in the same way.
  5. Heat the refined oil in a kadhai, put in 2-3 spoons of suji on a plate and roll the cutlet on it. Deep fry it on a medium heat till it truns golden brown.
  6. Serve with tomato ketchup/ coriander or mint chutney.

I tried the recipe and it was a complete failure. First of all it does not become a dough. Second of all when you manage to get it all together and our the Cutler in the oil for frying it all starts to fall apart. Very disappointed with the way it turned out.
