Ingredients to make Veg Pulao

  • Gobindo Bhog rice-2cups
  • cloves-4/5
  • cardamoms-4
  • cinnamon stick-1
  • bay leaf-1
  • Veggies-(carrot,bellpepper,peas,spring onion)
  • White oil+ghee-2 tspn each
  • Salt & sugar-as per taste
  • Water-3.5 cups(for 2 cups of rice only)
  • coriander leaves- for garnishing 

How to make Veg Pulao

  1. Soak the rice well in enough water for 1/2 hour.
  2. Then drain the water carefully & spread the wet rice over a flat dish or a paper.Let it dry for 2-2.5 hrs.
  3. Meanwhile cut the veggies into small pieces.
  4. Now,heat oil & ghee together in a big mouthed pan.Fry the veggies and keep aside.
  5. Now,temper rest of the oil with bay leaf,cloves,cardamoms & cinnamon stick.Stir for a while till the aroma comes.
  6. Now pour the water into it and pour the rice into the water when it starts boiling.
  7. Add salt and veggies.Now,mix them well.Let the rice boil well for 8-10mins.
  8. Now,add sugar & keep stiring continuously otherwise the lower part of the rice may burn.
  9. Cook for 3-4mins.Sprinkle 1/2 tspn ghee.Spread it over a flat dish to avoid greasiness
  10. Serve hot.

My Tip:

Always spread the rice on a flat dish to avoid greasiness.
