Ingredients to make Baigan ka bharta

  • 1 large Eggplant
  • 3 tablespoons oil
  • 1 medium onion, finely chopped
  • 2 green chillies, chopped
  • 3 garlic Cloves
  • 1 tsp cumin seeds
  • 2 tomatoes, finely chopped
  • 1 teaspoon red chilli Powder
  • 1 tablespoon coriander Powder
  • 1/2 teaspoon turmeric Powder
  • salt to taste
  • Roasted baingan Pulp
  • 1 tablespoon Chopped coriander

How to make Baigan ka bharta

  1. Apply oil over eggplant and make 4-5 slits on all sides of it
  2. Roast it on direct flame for around 20 mins and peel the skin off. Roughly mash it using potato-masher
  3. Heat oil in a thick-bottomed pan and add cumin seeds in it
  4. Once it stops crackling, add chopped green chillies, garlic, spring onions into it. Saute it until onions are soft.
  5. Add all remaining ingredients along with spices in it. Mix everything well
  6. Cook it uncovered for approx 4-5 mins.
  7. Garnish with chopped coriander and serve hot with millet flour rotla
