Just one more day to go when the school here reopens after the long summer vacation. Having spent lavish time enjoying at home, Amaan is not in a mood to go back to school once again. Hope he catches up the routine once it starts. Today, I am presenting my Mushroom Fry recipe. This time I made it in masala gravy and it had turned out really well.....

Ingredients Serving: 4

  1. Mushrooms - 200 gms cleaned washed and sliced
  2. Green cardamom - 2
  3. Cinnamon - 1 inch
  4. Onion - 2 large finely sliced
  5. Tomato - 1 small chopped
  6. Ginger garlic paste - 1 tsp
  7. Red chili powder - 1 tsp
  8. Turmeric powder - 1/2 tsp
  9. Coriander powder - 1 tsp
  10. Cumin powder - 1 tsp
  11. Garam masala powder - 1 tsp
  12. Cashew nut paste - 1 tbsp
  13. Yoghurt - 3 tbsp whisked
  14. Kasoori methi/dried fenugreek leaves - 1 tsp lightly crushed between hands
  15. Fresh cream - 1/3 cup
  16. Oil
  17. Salt - to taste


  1. In a kadhai heat oil, add green cardamom and cinnamon. Saute for few seconds
  2. Add onions and saute them till they are translucent
  3. Add ginger garlic paste and cook till raw smell disappears
  4. Add tomato, red chilli powder, turmeric, coriander powder, cumin powder, garam masala and salt. Cook till oil separates
  5. Add cashew nut paste dissolved in 1/2 cup water and stir
  6. Add mushrooms and cook on medium heat for few minutes
  7. Lower the flame, add yoghurt while stirring continuously
  8. Add kasoori methi and mix well
  9. Add fresh cream and cook till gravy is thick
  10. Serve hot with roti or rice
