Ingredients Serving: 4

  1. 1 kg baingan
  2. 3-4 medium sized onion chopped
  3. 2 medium sized tomato chopped
  4. 2 tbs oil
  5. 1/2 tsp red chilly powder
  6. 1/4 tsp black pepper powder
  7. salt to taste
  8. Pinch turmeric powder
  9. Chopped fresh coriander leaves


  1. Peel and cut the brinjal into pieces.
  2. Now wash and put all the brinjal pieces in cooker .
  3. Add pinch table salt , turmeric powder and mix it.
  4. Cover the cooker with lid and turn on the heat.
  5. After 2-3 whistles ,turn off the heat.
  6. Open the cooker and drain the boiled brinjal.
  7. Now add oil in a wok and heat it.
  8. Add onions and fry till soft and translucent
  9. Add table salt and red chilly powder .
  10. Add tomatoes .mix and cover the wok with lid till tomatoes becomes soft.
  11. Once the mixture starts leaving wok, add boiled brinjal and mix well.
  12. Cook on low flame for 3-4 min. and turn off the heat.
  13. Add fresh coriander leaves and serve hot.
