Ingredients to make Thirunelveli halwa /whole wheat halwa

  • 250 grams of whole samba wheat
  • 2 1/2 cups of sugar,1/2 cup for caramelization
  • 3 1/2 cups of water
  • 200 - 250 grams of ghee
  • Few cashews

How to make Thirunelveli halwa /whole wheat halwa

  1. Take 250 gms of whole samba wheat flour and soak for 8 hrs.
  2. Once soaked, grind the wheat and extract the milk.
  3. Leave extracted milk undisturbed for 3-4 hrs to let it settle.
  4. See that water on top is clear.
  5. Gently pour the clear water.
  6. Then pour the thick wheat milk.
  7. Heat a pan and add 2 1/2 cup sugar.
  8. Add 1 cup water and stir.
  9. In another pan, add 1/2 cup sugar.
  10. Add little water to help with the caramelization process.Once it becomes golden brown, remove from flame and pour into the sugar mixture.
  11. Mix and stir well until the 1st string consistency is achieved. Then add 1 cup whole wheat milk.
  12. Add 2 1/2 cups water.
  13. After 20 mins, the batter will become slightly thick. Add 200 gms ghee little by little. Mix well.
  14. After 1 1/3 hour, the colour and consistency should change.
  15. AFTER 1.1/3 HOURS CHANGE THE COLOR AND GO TO THE CONSISTENCY
  16. AFTER 1 HOUR 20 MINUTES ADD ROSTED CASHEWS AND MIX WELL
  17. REACHED THE NONSTICKY CONSISTENCY
  18. AFTER 1 HOUR 30 MINUTES SWITCH OFF THE FLAME AND TRANSFER THE BOWL
  19. HOT THIRUNELVELI HALWA/WHEAT-HALWA IS READY
