Ingredients to make Kurkuri Bhindi

  • Bhindi Kurkuri-Ingredients: Okra/Lady's Finger/Bhindhi -250 gm or 20 count, Besan/ Gram flour - 2 tbsp Rice flour-1 tsp Red chilli powder-1 tsp ,Coriander powder -1 tsp ,Cumin powder-1 tsp, Vinegar/ Lemon juice - 1tbsp ,Onion-1 thinly sliced ( optional) ,curry leaves- few ,Chat masala powder -a pinch

How to make Kurkuri Bhindi

  1. Method I. Cutting style of Okra : 1. Clean and wash all the okra and pat it with kitchen towel and keep it rest for 20 min to get it dry
  2. 2. First take an okra and cut both of its edges and then slit into two halves in lenghtwise. Now carefully remove all the inner seeds and flesh sing sharper edges of knife.
  3. 3.Now cut okra into thin stripes which is in length wise for making crispy kurkuri.Do the same for all okra.
  4. II.Making batter for Bhindi Kurkuri.: 4.Now in a wide bowl add sliced bhindi, onion(if used ),salt, red chilli powder , and coriander powder and mixed well.
  5. 5.Now add lemon juice or vinegar and mixed well to make the bhindi mixture little wet.
  6. 6. Now add besan flour and rice flour to the mixture and mixed well so that all the okra coated well with besan flour. It should not be too watery like pakora batter.
  7. III . Frying Kurkuri Bhindi : 7.Heat a non stick pan or a steel pan and add oil for deep frying. When oil is heat enough, put okra mixture into oil and fry it under low medium flame, until it turns golden brown.
  8. 8.When it turns golden brown draint it from oil and transfer it into plate with kitchen towel.
  9. 9. Sprinkle some chat masala powder and serve hot with hot cup of tea... Enjoy !!!

The beauty of bhindi kurkuri lies in how we cut the bhindi into thin stripes. So wash them and pat it try to get more crunchy Crispy Kurkuri Bhindi
