ABOUT Rajama Tortilla Wrap RECIPE

Breakfast, lunch, or dinner wraps are a great way to give a whole meal. They are a portable handful so you can get out the door. It's a real comfort food for me.

Ingredients Serving: 4

  1. For dough-
  2. Corn flour (Makki aata)- 1 cup
  3. Whole wheat flour- 1 cup
  4. Red chilli powder or chilli flakes- 1 tsp
  5. Dried mix herbs- 1 tsp
  6. Black pepper powder- 1 tsp
  7. Salt- to taste
  8. Water- ¾ cup approx.
  9. Oil- 2 tbsp
  10. For filling-
  11. Kidney beans (Rajma)- 1 cup
  12. Chopped onion- ½ cup
  13. Chopped tomato- 1 cup or tomato puree- ½ cup
  14. Ginger-garlic paste- 2 tsp
  15. Red chilli powder- 2 tsp
  16. garam masala powder- 1 tsp
  17. Salt- to taste
  18. Butter- 2 tbsp
  19. For Salsa-
  20. Chopped tomato- 1 ½ cups
  21. Chopped onion- 1 cup
  22. Chopped green spring onion- ½ cup
  23. Diced capsicum- ½ cup
  24. Chopped fresh coriander leaves- ¼ cup
  25. Minced garlic- 1 tsp
  26. Minced green chilli- ½ tsp
  27. Chopped pickled jalapeño pepper - 1 tsp
  28. Lemon Juice- 1 tbsp
  29. Vinegar from bottol of pickled jalapeño pepper or any vinegar- 1 tsp
  30. Black pepper powder- ½ tsp
  31. Dried oregano - 1 tsp
  32. Tabasco sauce or any hot chili sauce- 1 tsp
  33. Salt- to taste
  34. For serving-
  35. Cheddar or proceed cheese- 1 cup or more as per your like
  36. Tomato ketchup- as required

Instructions

  1. For Filling- Soak the beans overnight or 8 hrs with pinch of soda bi-carb, boil them proparly.
  2. Heat butter and saute the onions until transparent. Add ginger-garlic paste & tomato. Sauté till they soften. Add the beans, salt, chilli powder, garam masala and mix well.
  3. Cook till the colour darkens, mashing the mixture as it cooks. Keep aside.
  4. For Salsa- Mix all ingredients in a bowl& keep aside.
  5. For Tortilla- Mix all the ingredients together and make a soft dough with water. Do apporox. 8 parts of this dough.
  6. Roll out into thick (compare to chapatti) rounds the size of a chapati and roast on a griddle (tawa) without any oil.
  7. For Serving- After roasting one side of the tortilla, flip it. And do low flame of gas. Rest the tortilla on a griddle & do fast remaining task means…..
  8. Spread the cheese in the middle of a tortilla, then put rajama filling on it, then put salsa on it, then spread some tomato ketchup. Then spread cheese on an upper layer.
  9. Wrap it and serve immediately.
