Ingredients Serving: 3

  1. 3 to 4 medium sized brinjals
  2. Two onion
  3. Ginger garlic paste 1 tbsp
  4. Garam masala 1/2 tsp
  5. Turmeric powder
  6. Salt
  7. Chili powder 1 tsp
  8. Green chili 2
  9. Cinnamon powder 1/2 tbsp
  10. 2 piece of cinnamon
  11. Green coriander to garnish
  12. Oil 2 tbsp

Instructions

  1. Wash and pat dry the brinjals. Chop them into long slices.
  2. Heat a kadhai. Add oil. When oil is hot add the cinnamon sticks and chopped onion.
  3. Saute for a while. When onions change color add ginger garlic paste. Saute for two minutes.Add the chopped brinjals.
  4. Add turmeric and chili powder. Add salt.
  5. Mix all things well and cover.
  6. Cook on a low flame.
  7. Check in between. Stir gently so that brinjals don't break.
  8. When the brinjal soften and masala coats it well add garam masala and cinnamon powder.
  9. Mix well very gently or else the dish will become mushy. Garnish with green coriander.
  10. Serve hot with chapati or steamed rice.
