These sweet potato doughnuts are made completely with innovation, it’s the perfect way to sneak some sweet potatoes into your breakfast.

Ingredients Serving: 15

  1. 3cups Flour
  2. 1½cups Sugar
  3. 2teaspoon Baking Powder
  4. ½teaspoon Baking Soda
  5. ½teaspoon Cinnamon powder
  6. ½teaspoon salt
  7. 1egg
  8. ½cup Sour Cream
  9. 1cup mashed Sweet Potato
  10. ½cup water
  11. Oil for frying

Instructions

  1. In a medium bowl, combine flour, sugar, baking powder, baking soda, cinnamon, and salt.
  2. In a large bowl, combine eggs, sour cream, and sweet potato. Gradually add flour mixture, stirring to combine.
  3. Turn dough out onto a heavily floured surface.
  4. Knead in flour with hands as needed (dough will be sticky). Roll out dough to 1/2-inch thickness. Cut out dough with a 2 1/4-inch round doughnut cutter.
  5. Using your fingers, stretch the dough until an inch opening is formed and the doughnut is about 3 " wide.
  6. In a oven, heat vegetable oil over medium heat. Cook doughnuts, in batches of 4-5, in hot oil, 2 minutes per side, or until lightly browned.
  7. Drained the donuts on paper.
  8. In another pan, add ½cup sugar and ½cup water. Cook until sticky.
  9. Lastly Coat the donuts on sticky sugar syrup.
