Ingredients Serving: 4
1 cup rice (soaked for 30 minutes)
1 1/2 cup water
1/2 cup chopped vegetables (carrots, bell peppers etc)
1 small onion (thinly sliced)
1 small tomato (finely chopped)
1 tablespoon ginger-garlic mince
1 tablespoon coriander (finely chopped)
1 teaspoon red chili powder
1 teaspoon turmeric powder
salt to taste
For garnishing- 2 green chilies (finely chopped)
Instructions
In a non sticky pan add one teaspoon of oil. Once heated saute' onions until soft and pink.
Now add chopped vegetables and ginger-garlic mince. Cook them on low for a minute.
Add red chili powder, turmeric powder and tomatoes. Also add salt, cook for another minute.
Finally add soaked rice and 1 1/2 cup of water. Cover and cook for 5 minutes on low heat.
Sprinkle some chat masala on top. Serve hot with 'adrak chai'
