Ingredients Serving: 4

  1. 4 Eggs, boiled
  2. 2 Onion, chopped
  3. 1 big Tomoto
  4. 1 small cup Moong dal
  5. 1/2 inch Ginger
  6. 4 Green chillies chopoed
  7. 4 tbsp Oil
  8. 1 tsp Ginger Garlic paste
  9. A few Curry leaves and Methi leaves
  10. A pinch of red chilli powder
  11. A pinch of Turmeric powder
  12. A pinch of Ajwain
  13. A pinch of Yellow food colour
  14. Coriander leaves half bunch
  15. Salt to taste

Instructions

  1. Heat oil in a vessel, add chopped green chillies, ginger, curry leaves and ajwain. Fry for 1-2 minutes
  2. Add onion chopped and fry for 5 minutes. Then add methi leaves and fry for again 5 minutes.
  3. Add ginger garlic paste, turmeric powder, red chilli powder, fry for 2 minutes. Add tomatoes and again fry for 2 minutes.
  4. Add coriander leaves, yellow food colour and salt to taste.
  5. Then add boiled moong dal, fry for 3 minutes. Then add boiled eggs and cook for 5 minutes.
  6. Last garnish it coriander leaves. Yummy egg khurma is ready to serve
