ABOUT Ripe Jackfruit Sweet Appe RECIPE

This is popular dish using ripe jackfruit in Konkan belt. This dish is a actually a fried fritters but I have changed method to make a dish healthy. The appearance of this dish is not too good but believe me, it tastes heavenly.

Ingredients Serving: 4

  1. Ripe Jackfruit pods/gare, chopped- 2 cups
  2. Jaggery- ½ cup
  3. Rawa/Sooji/ Semolina- 1 cup
  4. Fresh coconut scrapped- ¼ to ½ cup
  5. Black or white sesame seeds- 1 tbsp (optional)
  6. Cardamom Powder- ¼ tsp
  7. Nutmeg powder- ½ tsp
  8. salt- a pinch
  9. Baking Soda- a pinch
  10. Oil or clarified butter for greasing- as required

Instructions

  1. Dry roast semolina about 5 minutes to remove it's rawness.
  2. Discard the seeds and chop the clean jackfruit pods.
  3. Grind chopped jackfruit along with jaggery into smooth paste without adding water.
  4. Transfer this paste into a mixing bowl. Then add semolina cardamom powder, nutmeg powder, scrapped coconut, black sesame seeds, baking soda and salt.
  5. Mix well and allow the mixture to rest for 20 to 30 minutes.
  6. Heat the non-stick 'Appe' pan. Apply a little oil in the rounds.
  7. Pour the above mixture in the pan. Cover and cook for few minutes. Fry both sides until it will be cooked & became golden brown.
  8. Serve them warm or at room temperature.
