Bengali Pulav with Paneer Chatpata

This is my mom's pulav recipe and I tried to recreate it for her :)

Ingredients Serving: 2

  1. 200gm paneer
  2. 2 medium sized onions
  3. 1 tomato
  4. 2 green chilly
  5. 1 teaspoon turmeric
  6. 11/2 teaspoon Jeera Powder
  7. 1 1/2 teaspoon Chilly Powder
  8. 1 teaspoon aamchur powder
  9. 2 teaspoon of Imli and jaggery chutney
  10. 1 cup long grain basmati rice
  11. 1 teaspoon turmeric
  12. 1 carrot, jullian cut
  13. 1/2 cup of rasins and cashew
  14. 2 tablespoon sugar
  15. whole garam masalas
  16. 2 bay leaves
  17. salt to taste

Instructions

  1. For Pulav: Add oil in the kadhai add the julianed carrots and add a teaspoon of sugar and carmalize the carrots and keep aside.
  2. In a kadhai, heat 1 tbspn of oil. Add raisins,cahsew, bay leaves, cloves, cinnamon stick and cardamom. Let it splutter. Add rice, turmeric.
  3. Fry till the rice is fragrant. For 1 cup of rice add 2 cups water. Add 2 table spoon of sugar and salt to taste.
  4. Cover and cook over low flame for 15 minutes and let it rest. Garnish with the caramelised carrots.
  5. For Panner Chatpta: Heat oil in the kadhai add 1 teaspoon of jeera let it splutter and add in the sliced onions and slit chillies
  6. Once the onion get light brown colour add in the diced tomatoes and cook till the raw smell is gone.
  7. Mix the spice powders with little water and add to the kadhai and cook on medium flame till its nicely cooked
  8. Add in the paneer mix with the masala. Add the special imli and jiggery chutney and cover over low flame
  9. Let it simmer for 10 minutes and you are done.
