Enjoy this healthy whole wheat banana oats dates mini muffins made with cane sugar. Mildly sweeted and perfect for kids

Ingredients Serving: 4

  1. Over ripe Bananas- 4
  2. Rolled oats - 1/4 cup
  3. Whole Wheat Flour- 1.5 Cups
  4. coconut Oil - 1/4 cup
  5. egg - 1
  6. Curd/yoghurt - 1/4 cup
  7. Milk - 4 tbsp
  8. Baking soda - 1 tsp
  9. Cane sugar - 3/4 cup
  10. dates - 5
  11. cinnamon powder - 1/4 tsp
  12. salt - 1/4 tsp

Instructions

  1. Preheat the oven to 170°C .
  2. Mash the bananas in a bowl. To it, add the egg, curd,milk and oil. Whisk together until combined.
  3. Seive all the dry ingredients together and sift to the wet mixture.
  4. Add chopped dates and mix gently.
  5. Spoon out the mixture into individual muffin cups greased with oil or liners.
  6. Sprinkle some oats on top and bake at 170 degrees for 15mins or until top turns golden brown and toothpick inserted comes out clean.
  7. I had extra dough so used it into a pie mould and baked together.
