Ingredients Serving: 4

  1. 1/2 kg basmati rice
  2. 1/2 kg fish
  3. 2 onion, big sized and chopped
  4. 2 tomatoes, big sized
  5. Yogurt 1 cup
  6. Roasted onion 1 cup
  7. Pure ghee 1/2 cup
  8. Green chillies 10 as per your taste
  9. Cinnamon half inch & Cloves 4
  10. Ginger-Garlic paste 2 tbsp
  11. Keser 1 teaspoon
  12. Turmeric powder 1 teaspoon
  13. Black pepper powder 1 teaspoon
  14. Red chilli powder 1 teaspoon
  15. Oil 3-4 tbsp
  16. Food colours 3
  17. Roasted cashewnuts
  18. Half bunch mint leaves
  19. Juice of 1 Lemon
  20. Half bunch of coriander leaves
  21. Salt to taste
  22. Bay leaves, a few

Instructions

  1. Firstly soak the rice for 2-3 hours in water.
  2. Marinate the fish for 1/2 an hour with lemon juice, chopped green chilles and salt. In the marinated fish, put red chilli paste/red chilli powder & ginger-garlic paste. Shallow fry and keep aside.
  3. Heat oil in pan, then add cinnamon, green chilli, cloves, onions chopped and fry it till it turns brownish in colour. Add the ginger-garlic paste, red chilli powder and tomatoes in that.
  4. After the masala gets totally done, add coriander leaves, salt, black pepper powder and yogurt. Keep it on the stove for five minutes, after it's steamed add in fried fish as it must not be broken.
  5. Into the boiled milk, add kessar/Saffron. Take a large vessel put in water, 1 tbsp oil, cinnamon, cloves, few mint leaves, lemon juice ,cardamom, bay leaves and salt to taste, bring it to boil.
  6. Cook rice for 10 mins before it gets totally done. Then remove it from the flame and dry it.
  7. Lastly in a pan 1st layer add the ready fish masala, 2nd layer with boiled rice, lemon juice, kesar milk, few mint leaves, pure ghee, garnish it with roasted onions, roasted cashewnut, coriander leaves. Repeat the same layer thrice, make some space in between the rice so the rice can be easily on the flame.
  8. Yummilicious fish fried biryani is ready.
