Very tasty podimas with everyone's favourite vegetable potato.

Ingredients Serving: 2

  1. Medium sized potatoes : 3
  2. Onion : 1
  3. Green chillies : 3
  4. Curryleaves : 10
  5. Mustard : 1 teaspoon
  6. Urad dal : 1/2 teaspoon
  7. Turmeric : 1 teaspoon
  8. Shredded coconut : 2 teaspoons
  9. Oil : 1 teaspoon
  10. Salt : to taste

Instructions

  1. Boil and mash the potatoes.
  2. Heat oil in a pan, and add mustard seeds. When the mustard seeds start to splutter, add urad dal and curry leaves.
  3. Add onion and green chillies. Sauté for a while.
  4. Add turmeric and salt. Mix everything together.
  5. Add the mashed potatoes and mix well. Keep on low flame for a while.
  6. Once the mixture is well-cooked, add shredded coconut. Slightly mix with the ladle and switch off the flame.
  7. Potato podimas are ready to serve.
