A very delicious dessert made with potatoes.

Ingredients Serving: 4

  1. Whole fat milk : 1 litre
  2. Medium sized potatoes : 2
  3. Sugar : 1 cup
  4. Badam : 5
  5. Pista : 5
  6. Cashews : 5
  7. Badam : to grind
  8. Saffron : one pinch

Instructions

  1. Boil the potatoes and grind them into a smooth paste by adding little water.
  2. Grind 5 badams into a fine powder.
  3. Boil the milk until it reduces to1/2 of its quantity.
  4. After 15- 20 minutes add the grounded potato paste.
  5. Scrape down the edges of the pan every now and then to mix the fat of the milk which is layered on the edges.
  6. Once the 1 litre milk reduces to half a litre, add sugar and keep on a high flame untill the sugar dissolves.
  7. Add nuts, saffron and grounded badam powder.
  8. Keep on high flame for 2-3 more minutes to let the flavour of the nuts and the saffron mix with the basundi.
  9. Once it cools to room temperature, refrigerate for a while and serve chilled.
