ABOUT Lemon Rice RECIPE

Extremely light and delicious dish

Ingredients Serving: 2

  1. 2 cups - Rice, cooked
  2. 2 tbsp - Mustard seeds
  3. 2-3 Dried chillie whole
  4. 1 cup - Fresh curry leaves
  5. 3-5 Small peices of lemon rind
  6. 1 tsp Salt
  7. 1/2 tsp Chilli powder
  8. 3 tbsp Olive or flax oil

Instructions

  1. In a pan heat oil on low heat, add the mustard seeds and dried chillies . Heat for 10mins till they pop
  2. Add the lemon rind and curry leaves. Cook for 5mins (take out the rind when it turns black)
  3. Add salt and Chilli powder and cook for a min. Add the rice to the pan and mix well.
  4. Squeez the lemon into the pan and mix and cook for 1 min
