This is one way of justifying to my craving for a cake that is apt for breakfast as it has all the good ingredients thrown in.If your kids demand cake at the early hour this one is good to keep handy.This skillet breakfast cake is even good to serve when you have kids coming over for play or to take to your kids school during games.Makes a delightful healthy snack especially for after school.

Ingredients Serving: 6

  1. 3/4 cup All purpose flour
  2. 3/4 cup whole wheat flour
  3. 1/4 cup almond meal
  4. 1/2 cup oats
  5. 3/4 cup brown sugar
  6. 3/4 cup Banana puree
  7. 1 1/2 tsp Baking powder
  8. 1/2 cup melted butter /1 stick or use 1/2 cup olive
  9. 1/8 tsp salt
  10. 1 1/4 cup yogurt
  11. 1 tsp baking soda
  12. 1/4 cup toasted walnuts.
  13. 1/4 cup milk ,1 tsp vanilla

Instructions

  1. Pre heat oven to 350 degrees F/ 180 degrees C and lightly grease a cast iron skillet 10×12 . ( use a regular cake tin if you do not want to make a skillet cake.)
  2. Mix flours,sugar,salt,baking powder,baking soda,almond meal and oats. Mix well butter/ oil ,yogurt, banana puree, and milk
  3. Stir in the cranberries and the walnuts. Add the wet ingredients to the dry and combine to incorporate all ingredients well.Do not over stir.
  4. Bake for 35-40 minutes until done.Check with a toothpick to see if it comes clean. Let cool completely before you slice…Enjoy!
