Ingredients Serving: 4

  1. For bhature:
  2. Whole wheat flour 1+ 1/2 cup
  3. Refined flour 1/2 cup
  4. Boiled potatoes 2 and mashed
  5. Salt to taste
  6. Kasoori methi 2 tablespoon
  7. Ghee 2 tablespoon
  8. Curd 3 tablespoon
  9. Baking soda 1/4 teaspoon
  10. Carrom seeds 1 teaspoon
  11. Water for kneading
  12. Oil for frying
  13. For chole:
  14. Kabuli chana 1 cup soaked overnight
  15. Salt to taste
  16. Turmeric powder 1 teaspoon
  17. Red chilli powder 2 tablespoon
  18. Chana masala 2 tablespoon
  19. Asfetoida 1/4 teaspoon
  20. Cumin seeds 2 tablespoon
  21. Dry mango powder 2 tablespoon
  22. Bay leaves 2
  23. Black caradamom 1
  24. Green cardamom 2
  25. Cloves 4
  26. Mace 2 pieces
  27. Cinnamon 1 stick
  28. Onion 2 chopped
  29. Ginger 2 tablespoon chopped
  30. Ginger julliens 2 tablespoon
  31. Garlic 2 tablespoon chopped
  32. Tomato puree of 3 tomatoes
  33. Coriander leaves
  34. Mustard oil 3 tablespoon

Instructions

  1. For bhature mix all dry ingredients except baking soda.
  2. Add boiled potatoes. Mix well.
  3. Now make a hole in centre and add baking soda and curd. Mix well. And make a smooth dough.
  4. Set aside covered for 2 hours.
  5. Now add chole to a pressure cooker and add 4 cup water . Add salt, turmeric powder, pomegranate peels, caradamom, cinnamon sticks, clives ,mace,. And pressure cook for 6 whisles.
  6. Add mustard oil in another pan smoke it and bay leaves, cumin seeds, asfetoida. Add chopped garlic, ginger and onion. Saute it till it becomes golden brown.
  7. Add tomato puree and saute it till oil seprates.
  8. Add coriander powder, dry mango powder, red chili powder, chole masala. And saute it. Add boiled chickpeas to it. Remove pomegranate peels.
  9. Cook for 15 minutes on low flame. Add slitted green chillies and ginger julliens. Your chole is ready.
  10. Now heat oil in a wok. Knead again with greasy hands the dough. Make balls from dough.
  11. Roll it with roller pin. Fry it in hot oil.
  12. Fry from both sides till it crispy.
  13. Make all bhaturas in same way. Serve with chole.
