ABOUT kaanchkolaar kofta kaalia (Raw banana spicy kofta curry) RECIPE

This is a special comfort food prepared by Bengalis for that special someone or on special occasions. soft to the core, crispy outside and soaked in the most flavourful thick gravy, this kofta curry is always a delight to prepare and feast on! It’s healthy too, as raw bananas contain compounds called short chain fatty acids (SCFAs), which nourish the cell tissue lining of the small intestine, dramatically enhancing the body's capacity to absorb nutrients.

Ingredients Serving: 4

  1. kaachkola/raw green banana : 3
  2. Potato : 1-2(medium)
  3. Onion : 1(medium-finely grated/paste)
  4. Garlic : 4-5 cloves(finely chopped)
  5. Green chilli : 2(finely chopped)/red chilli powder : 2 tsp.(as per taste)
  6. Fresh coriander leaves : 1/2 cup(finely chopped)
  7. Salt to taste
  8. Raisin : 10-12 pcs.
  9. Besan/gram flour : 1/2 cup or as needed to bind the koftas
  10. Corn flour : 1/3 cup
  11. For gravy :
  12. Bay leaf : 1
  13. Cumin seeds : 1/2 tsp.
  14. Ginger paste : 1 tblsp.
  15. Tomato : 2(medium)
  16. Turmeric Powder : 1 tsp.
  17. Red chilli powder : 1-2 tsp.(as per taste)
  18. Cumin Powder : 1 tsp.
  19. Coriander powder : 1 tsp.
  20. Oil : 2 tblsp. + oil for deep frying the koftas
  21. Bengali Garam Masala powder : 1 tsp.(take 2-3 of cardamoms, cloves and 1 stock of cinnmon and grind into powder)

  23. Water as needed

Instructions

  1. To make koftas : Peel green banana, potato and boil them.
  2. When cool, squeeze out as much water as possible, then mash them well.
  3. Mix onion paste, ginger-garlic paste, chopped green chilli or red chilli powder, salt, coriander leaves and raisin in mashed banana-potato mix.
  4. Add gram flour slowly in the mix until you can make a ball from the mix.
  5. Finish making ball shaped koftas from the plaintain-potato mix. Set aside.
  6. heat oil in a wok
  7. Now for frying the koftas, roll your koftas on cornflour and put them in oil.
  8. In medium flame, fry the koftas until they are golden brown from all sides.
  9. Drain on paper towel.
  10. To make gravy, heat oil in a pan, add bay leaf and cumin seed.
  11. When seed crackles, add ginger paste and add a mixture of turmeric, chilli, cumin and coriander powder, dissolved in 2 tblsp. water.(take care not to burn the spices)
  12. Now add chopped tomatoes and cook until tomatoes get pulpy and oil seperates from spices.
  13. Add 1 cup warm water in it. Let it cook until the gravy thickens.
  14. Just 2-3 minutes before it's done, add fried koftas in the gravy and in low flame let it cook.
  15. Sprinkle little Bengali garam masala over the gravy and garnish with coriander leaves
  16. serve it immediately with steamed rice/rotis/naans, orelse the koftas will soak all the gravy and will become soggy
