This swiss version of pancakes is a healthy option for breakfast.

Sweet potato rosti

Ingredients to make Sweet potato rosti

  • Sweet potatoes 2
  • olive oil 1 tbsp+1 tbsp
  • salt to taste
  • Black pepper powder 1 tsp

How to make Sweet potato rosti

  1. Wash the sweet potatoes nicely.
  2. Peel and grate with big box grater.
  3. Now squeeze the water from this and take in a bowl.
  4. Add a tbsp of olive oil,salt and pepper.Mix well.
  5. Take a non stick pan and drizzle some olive oil.Put the grated sweet potato mixture on pan and press tightly into circular shape.
  6. Keep it thick.Cover and cook in slow flame till the lower side becomes brown.
  7. When the edges appear brown,take a plate .Keep it upside down on the rosti and invert the pan such that the rosti is transfered on the plate.
  8. Now slide the rosti again on pan to cook other side also.
  9. Cover for 5 minutes and then cook uncovered for 2 to 3 minutes to get a crisp external layer and soft internal one.
  10. Our sweet potato rosti is ready.Simple but healthy breakfast.Cut it into pieces and serve.

My Tip:

Squeeze out the water from grated sweet potatoes properly.
