ABOUT Jamaican Shrimp in a creamy curry sauce RECIPE

A deliciously spicy yet creamy curry that pairs beautifully with rice.

Ingredients Serving: 5

  1. 500gm Shrimp, peeled and deveined
  2. 1 Onion, minced
  3. 4-5 garlic cloves, minced
  4. 200ml fresh cream
  5. 1/2 cup chicken stock
  6. Fresh coriander leaves- a bunch
  7. 2 tbsp Curry powder
  8. Salt to taste
  9. Fresh Green chillies/jalapenos- minced, as desired
  10. a drizzle of olive oil

Instructions

  1. Heat a pan and drizzle in the oil.
  2. Add in the onion, garlic and chillies. Saute for a minute till fragrant.
  3. Add curry powder and roast for a bit, now add in the cream and stock. Stir well to get a creamy curry.
  4. Just before you are ready to serve, add in the cleaned shrimp to the curry.Cook the shrimps only for 10-15 minutes else they will become hard and rubbery.
  5. Season and serve garnished with fresh coriander.
