ABOUT Tray baked lamb chops with harissa and herbs RECIPE

The lamb chops is a simple yet flavourful moroccan dish that can be prepared easily with just a handful of ingredients. It uses all the ingredients in an Indian kitchen apart from the harissa paste and rosewater. But one can use paprika instead of harissa paste as well.

Ingredients Serving: 4

  1. 800 gms lamb chops
  2. 2 tbsp oil
  3. 1 tsp turmeric powder
  4. 3 tsp cumin powder
  5. 1 tsp cinnamon powder
  6. 3 tsp finely chopped garlic
  7. 1 tbsp rosewater
  8. 3 tbsp harissa paste
  9. 3 tbsp pepper powder
  10. 1 onion finely sliced
  11. Salt to taste
  12. Chopped coriander leaves

Instructions

  1. Wash the lamb chops and place them in a large bowl. Add 2 tbsp of oil, garlic, cumin powder, cinnamon powder, turmeric powder, salt, rosewater, harissa, black pepper powder, salt.
  2. Mix them with the lamb chops thoroughly and marinate for a minimum of 2 hours in the refrigerator.
  3. Preheat the oven at 160 degrees. Line a baking tray with foil and arrange the chops neatly onto it. Cover the chops with another foil.
  4. Once the oven is hot enough, put the lamb in the oven. Check it after 20 minutes. Once it is half done, remove the cover and let it cook for another 15 minutes.
  5. The cover will ensure that the lamb juices don't dry up as well it helps the lamb to cook.
  6. Once it is cooked, in a separate pan, heat the remaining oil and add onions to it. Once it is gently fried, add the cooked lamb and give it a gentle toss and add coriander leaves.
  7. Serve it immediately as a starter or as a main course with couscous or with a salad.
