a delcious blend of the sweet ness from sweet potatoes and the mild sweetness from pumpkins , together make a Delicious curry which is flavored with a green coconut base

Ingredients Serving: 4

  1. 2 sweet potatoes
  2. 1/2 cup yellow firm peeled pumpkin cubes ,
  3. 1/4 cup grated fresh coconut
  4. 2 green chilies
  5. 1/2 tsp mustard seeds
  6. 1/2 tsp cumin seeds
  7. 1/4 tsp split udad dal
  8. salt as needed
  9. 2 tsp coconut oil
  10. some curry leaves
  11. pinch of asafoetida powder
  12. pinch of turmeric powder

Instructions

  1. keep yellow pumpkin , washed and peeled , chopped into cubes . wash , peel sweet potatoes and also chop into cubes .
  2. cook both in a pan of hot water with a pinch of turmeric powder .as pressure cooking might make it too mushy .
  3. add just enough water to cook the vegetables, .
  4. in pan , add the coconut oil , let it heat up, add mustard seeds, cumin and udad dal .
  5. add curry leaves, add the cooked vegetables and gently stir as it will get too mushy .
  6. add salt, pinch of asafoetida powder .
  7. meanwhile grate fresh coconut and make a coarse paste in blender with green chillies
  8. add this coconut green chillies paste to the vegetables, stir gently .
  9. switch of flame . serve with rice and rasam .
