Ingredients Serving: 6

  1. Mustured oil 1 cup
  2. Red chilli 250 gms
  3. Black pepper 1 tbsp
  4. Turmeric powder 1 tbsp
  5. Cumin seeds 2 tbsp
  6. Fennel seeds 2 tbsp
  7. Carom seeds 2 tbsp
  8. Mustured seeds 4 tbsp
  9. Asafoetida 2 pinch
  10. Ajwain 1 tbsp
  11. Salt 3 tbsp
  12. Black salt 1 tbsp
  13. Vinegar 2 tbsp

Instructions

  1. TAKE RED CHILLI, WASH IT & DRY IN SUN FOR 2 HOURS.
  2. REMOVE STALK FROM CHILLI, SLIT THE CHILLIES FROM THE CENTER VERTICALLY.
  3. TAKE OUT SEEDS AND PULP FROM IT.
  4. PUT THE SEEDS FROM THE CHILLIES FOR THE SPICE MIX.
  5. PREPARE ALL CHILLIES LIKEWISE.
  6. HEAT A PAN AND ROAST 2 TBSP FENNEL SEEDS, 2 TBSP CAROM SEEDS 2 TBSP BLACK PEPPER.
  7. 2 TBSP CUMIN SEEDS & 1 TBSP AJWAIN. STIR & SLIGHTLY ROAST, THE SPICES FOR UPTO 2 MINUTES.
  8. TURN OF FLAME, KEEP TO COOL
  9. AS THE WHOLE SPICES COOL DOWN, THEN COARSELY GRIND IN MIXER JAR.
  10. KEEP GRINDER SPICES ASIDE.
  11. TAKE 1 CUP MUSTERED OIL TO BE ADDED TO PICKLE HEAT IT UP WELL.
  12. HEAT OFF AND LET IT COOL DOWN.
  13. ADD GRINDED SPICES, 4 TBSP MUSTERED DANA, 1 TBSP TURMERIC POWDER
  14. 3 TBSP SALT, 1 TBSP BLACK SALT, 2 PINCH ASAFOETIDA
  15. MIX ALL
  16. ADD 2 TBSP MUSTARD OIL AND MIX
  17. ADD 2 TBSP VINEGAR & MIX WELL.
  18. FILL THE CHILLI WITH SPICE MIX.
  19. SPICES PRESS WITH THUMB.
  20. KEEP ALL STUFFED CHILLIES IN A PLATE.
  21. TAKE OUT THE OIL IN A BOWL, DIP EACH STUFFED CHILLI IN OIL & TAKE OUT.
  22. KEEP IN IN A SEPARATE BOWL.
  23. TAKE REST FOR 10 MINUTES.
  24. FILL UP THE STERILIZED CONTAINER WITH STUFFED CHILLI PICKLE. POUR OIL OVER THEM.
  25. KEEP IT IN SUNLIGHT OR CUPBOARD TO TURN SOFT FOR 3 OR MORE DAYS.
