ABOUT Lemon Curd RECIPE

A versatile condiment that can be used to fill cakes, use as toppings on ice cream and can simply be enjoyed as a spread

Ingredients Serving: 6

  1. 3 Large eggs
  2. 3/4 cup sugar
  3. 1/2 cup fresh lemon juice
  4. 60 grams butter, at room temperature
  5. 1 tablespoon lemon zest
  6. A pinch of salt
  7. 1 tsp lemon extract, optional

Instructions

  1. Place a bowl over a double boiler, whisk together eggs, sugar, and lemon juice until blended. Stir constantly and let it cook for at least 10 minutes or until it looks like a thick sauce.
  2. Remove from heat and strain immediately to remove any lumps. Whisk in the butter until it melts completely.
  3. Add in the lemon zest, salt and lemon extract if using. Keep stirring until cool. Store in a air tight container for up to 2 weeks.

do we have to use whole eggs or just the yolk?
