BLEND THE LEFTOVER PINEAPPLE AND STRAIN THE JUICE.
ADD SALT AND BAKING POWDER TOGETHER WITH ALL PURPOSE FLOUR.

INGREDIENTS FOR THE UPSIDE DOWN PINEAPPLE CAKE.
POUR MELTED BUTTER IN A PREPARED GREASED PAN.
ADD BROWN SUGAR OVER THE MELTED BUTTER.
ADD A TEASPOON OF VANILLA ESSENCE OVER THE BROWN SUGAR.
PLACE PINEAPPLE ROUNDS AS SHOWN.
ARRANGE EVENLY AS SHOWN.
PLACE GLAZES CHERRIES IN BETWEEN PINEAPPLE RINGS.
PLACE CHERRIES EVENLY IN THE INNER CIRCLE.
CHERRIES ARE ARRANGED EVENLY.. KEEP IT ASIDE TILL THE CAKE BATTER IS PREPARED.
BEAT TWO EGGS TILL FROTHY AND PALE.
ADD SUGAR TO THE EGG MIXTURE.
WHISK TILL IT IS WELL COMBINED.
ADD PINEAPPLE JUICE TO THE MIXTURE.
ADD A TEASPOON OF VANILLA ESSENCE.
WHISK FOR FEW MINUTES.
ADD ALL PURPOSE FLOUR TO THE MIXTURE.
USE SPATULA TO MIX.
MIX WELL TILL THE FLOUR COMBINES WELL TO THE MIXTURE. CAKE BATTER IS READY.
POUR THE BATTER OVER THE PREPARED PINEAPPLE SETTINGS.
TAP WELL TILL THE BATTER SPREADS EVENLY.
PREHEAT OVEN TO 180 DEGREES CENTIGRADE . BAKE THE CAKE FOR 35 MINUTES.
CAKE IS EVENLY BAKING.
CHECK THE DONESS OF CAKE WITH THE TOOTH PICK.LET IT COOL.
PLACE THE CAKE PAN UPSIDE DOWN OVER A PLATE.
TURN IT UPSIDE DOWN. BEAUTIFUL PINEAPPLE UPSIDE DOWN CAKE IS READY. GARNISH IT WITH GLAZED CHERRIES.
