ABOUT Bhuna chicken RECIPE

A tasty yet flavourful chicken dish where the spices and chicken are fried gently without water. Bhuna Chicken is a savory Indian chicken dish and considered as a lighter version of takeaway favorites. Plenty of flavors, the kick of spices and the tender chicken pieces makes it a scrumptious meal. Boneless chicken pieces are smeared in tomato based gravy and cooked in fresh fragrance of ginger, garlic and bhuna masala. Yogurt is a little secret ingredient which can do wonders to your Bhuna Chicken Masala. Bhuna is basically the technique in which the spices are fried in very hot oil for the chicken to be immersed in. The recipe can be given a lot of variations like chicken tikka masala or chicken tikka bhuna by using various other ingredients in the basic recipe. The Bhuna Chicken recipe needs time as the chicken pieces needs to be roasted and the Bhuna sauce needs to be properly cooked. For the end result, it is actually worth taking all the efforts. The Bhuna Chicken tastes best when served with Roti, Naan or Rice.

Ingredients Serving: 8

  1. Chicken -1 kg
  2. Onion - 1 -2 large sized, thinly sliced
  3. Ginger paste- 4 tsp
  4. Garlic paste -5 tsp
  5. Curd - 4-5 tbsp
  6. Salt- as required
  7. Kashmiri chili powder - 1 tbsp
  8. Chili powder - 2 tsp
  9. Sugar -1 tsp
  10. Cumin and coriander powder - 2 tsp
  11. Garom masala - 2-3 tsp
  12. Coriander leaves - one handful

Instructions

  1. Marinate the chicken with curd, salt, sugar, cumin and coriander powder, kashmiri chili powder, chili powder, turmeric powder, ginger-garlic paste (2 tsp each) and garom masala for 45 mins to 1 hour.
  2. Heat the kadai with 3-4 tbsp of oil, then add the thinly sliced onion and fry till it turns brown in colour. Then add the rest of the ginger and garlic paste. Keep stirring for 3-4 mins.
  3. Now add the marinated chicken to the onion masala and stir the chicken for 4-5 mins on a high flame. Now reduce the gas on a low flame, cover the kadai with a lid and keep cooking on a low flame for 15-20 mins.
  4. Occasionally stir the chicken, the chicken will get cooked in it's own juice. After 15-20 mins open the lid, once the chicken dries up almost 80% and the masala chicken separate from oil means it's done. Check the seasoning and turn off the gas. Sprinkle some coriander leaves on top.
  5. If you need a little gravy, you can add a little water, but this chicken needs to be cooked without water.
  6. The bhuna chicken is ready to be served! Serve it with naan/roti or anything you like.
