ABOUT Hyderabadi Chicken Haleem RECIPE

Hyderabadi Haleem is one of the most famous recipes from Hyderabad. Haleem is made with Chicken or Mutton, Lentils, Broken wheat and other spices. Chicken Haleem is a very popular dish from the Hyderabadi cuisine. It is a rich and wholesome dish made with chicken, yoghurt, lentils, broken wheat and a lot of flavoursome spices. Chicken Haleem is an amalgamation of exotic herbs, chicken and lentils. The beautiful aroma which arises while cooking the Chicken Haleem is totally mesmerizing. The chicken is pressure cooked with ginger-garlic, tomatoes and a lot of spices, so that the chicken absorbs all the spices thus giving the whole dish an amazing wave of flavours. Broken wheat and lentil are cooked together and churned into a thick paste. The Chicken would then be cooked with the lentil paste. The finally formed dish is a total star dish for a family get together. Chicken Haleem tastes great when served with butter naan or rice.

Ingredients Serving: 6

  1. List 1 Ingredients-
  2. Oil: 2 tablespoon
  3. Tomato: 1 small sized
  4. Chicken: 500 gms
  5. Ginger-Garlic Paste: 2 tablespoon
  6. Plain thick Yogurt: 2 tablespoon
  7. Green Chillies: 2-3
  8. Turmeric Powder: 1/2 teaspoon
  9. Red Chilli Powder: 1 teaspoon
  10. Salt: 1 teaspoon
  11. Water: 1/2 cup
  12. List 2 Ingredients-
  13. Coarse Crushed Wheat/ Goduma Ravva / Ghem ka Ravva: 250 gms
  14. Water: 6 cups
  15. Chana Dal / Split Bengal Gram: 2 tablespoon
  16. Moong Dal / split washed green gram: 2 tablespoon
  17. Urad Dal/ washed Black gram: 2 tablespoon
  18. Toor Dal/ Split Pigeon Peas : 2 tablespoon
  19. Salt: 1 teaspoon
  20. List 3 Ingredients:
  21. Black Pepper powder : 1 teaspoon (to taste)
  22. Garam Masala Powder: 1 teaspoon
  23. Garnishing Ingredients-
  24. Chopped Mint, Chopped Coriander, Fried Onions, Lemon, Fried Cashews, Butter/Ghee, Mirchi Tadka (Check tip)

Instructions

  1. Part 1: In a pressure cooker, add oil and ginger garlic paste and fry for 2 mins until it turns brown in colour. Now add the chopped tomatoes and cook until its soft.
  2. Now add the rest of the ingredients from List 1 and pressure cook for 4-5 whistles or until the chicken leaves the bones or till its overcooked.
  3. Once the cooker is cooled down completely, remove the bones from chicken with your hands and keep it safe. Now take the chicken pieces and blend it for 10 seconds. Mix in the bones in the processed chicken.
  4. Part 2: While your chicken is cooking, in another pressure cooker add the List 2 ingredients and pressure cook for 2 whistles or until the wheat is mushy.
  5. Let the cooker cool down completely and then blend the mixture to a fine paste (Add water if required).
  6. Part 3: In a big and heavy bottomed pan mix together the chicken mixture and wheat mixture. Add the list 3 ingredients and 3-4 cups of water and cook on high heat until the mixture starts to bubble.
  7. Now turn the heat to medium and cook for another 20-30 minutes. Serve hot and garnish it with the garnishing ingredients.
