ABOUT Thur Rosha RECIPE

This recipe is made of raw banana flowers. Banana flowers are called Dhur in Bengali and Rosha means a gravy made of spices. I added potatoes in it as it’s a Bengali cuisine recipe. It’s a very healthy vegetable as they have a good quantity of iron and nutrients in it.

Ingredients Serving: 2

  1. 1 full banana flower/thur
  2. 4 tablespoon of all purpose flour
  3. salt 1/3 tablespoon
  4. turmeric powder 1/2 tablespoon
  5. water 1/2 cup
  6. oil for deep frying
  7. 1 potato cut into slices
  8. 1/2 tablespoon of fenugreek seeds
  9. 1/2 tablespoon of cumin powder
  10. 1/2 tablespoon of coriander powder
  11. 1/2 tablespoon of ginger paste
  12. 1/2 tablespoon of garam masala powder
  13. 1 bay leaf
  14. salt as per taste
  15. 1/2 tablespoon of turmeric powder
  16. 1 tomato sliced (optional)
  17. 4-5 tablespoon of oil
  18. 1/2 tablespoon of red chilli powder
  19. 1 cup of water
  20. fresh cream 2 tablespoon
  21. 2 tablespoon of ghee
  22. 1 green chilli

Instructions

  1. Take the inside part of the banana flower and cut into half
  2. Boil it in turmeric water for 10 minutes
  3. After that take them out of water and keep aside
  4. Make batter with all purpose flour, salt, turmeric powder and water to dip the pieces and fry
  5. Fry them in a pan till brown
  6. In another kadai, heat oil and temper fenugreek seeds in it and fry the potato slices
  7. Add salt, turmeric powder, cumin powder, coriander powder, red chilli powder and garam masala powder.
  8. Sauté them for a minute
  9. Pour a cup of water and boil. Add the fried banana flower in it.
  10. Boil it for 2 more minutes and then off the flame and spread 2 tablespoon of ghee in it.
  11. Garnish with 2 tablespoon of cream and green chilli. Serve warm.
