One of my favourite bengali recipe using banana flower.

Ingredients Serving: 6

  1. Banana flower 1 medium
  2. moong dal 3/4 cup
  3. Mustard oil
  4. Turmeric powder 1/4 tsp
  5. Cumin Powder 1/2 Tsp
  6. Coriander powder 1/2 tsp
  7. Green chilli 3
  8. Hing 1/4 tsp
  9. salt as per taste
  10. Ghee 1 tsp
  11. Garam masala whole ( cardamom 3, clove 2, cinnamon 1/2 inch , bay leaf 2)
  12. Garam masala powder 1/4 tsp
  13. Paanchphoron 1/2 tsp
  14. Dry red chilli 1-2

Instructions

  1. Separate each florets of banana flower , leave the innermost soft part
  2. Take each florets , break the head
  3. Like this , do the same process for all the florets , it will take 10 minutes . Now chop all of them .
  4. Pressure cook for 2 whistle in low heat with salt and water . Drain all the water in colander
  5. In the pressure cooker heat mustard oil , add paanchphoron , whole garam masala and dry red chilli. Let them crackle .
  6. Add cumin powder , coriander powder , tumeric powder , salt and little water , saute until aromatic
  7. Add slit green chilli and noong dal . Saute in low heat until dal turns aromatic.
  8. Add boiled banana flowers and salt, saute again in low heat
  9. Add 2 1/2 cups of warm water
  10. Cook until 2 whistle in medium heat
  11. Once the vapour is released , open pressure cooker check salt. Add ghee and sprinkle garam masala.
  12. Serve hot with rice
