Moringa Leaves Dal is a great yummy south Indian dish especially cooked in Telangana and Andhra states. Moringa leaves dal compliments especially rice by adding in essential vitamins, trace minerals and proteins. Thus with rice it becomes a wholesome meal. Moringa leaves are rich source of calcium, phosphorous, magnesium and other minerals. Tur Dal is very rich source of proteins and amino acids. Regular consumption of Moringa leaves dal would certainly ensure good health

Ingredients Serving: 6

  1. Tur dal washed 1 cup
  2. Water 2½ cups
  3. Turmeric powder ¼ tsp
  4. Green chillies chopped 7-8
  5. Onion chopped 1 small size
  6. Tomatoes chopped 2
  7. Dry moringa leaves 1 cup
  8. Tamarind lemon ball size
  9. Salt 1 tsp
  10. TEMPERING :
  11. Oil 2 tbsp
  12. Urad dal 1 tsp
  13. Mustard seeds ½ tsp
  14. Cumin seeds ½ tsp
  15. Fenugreek seeds ¼ tsp
  16. Onion chopped 2 tbsp
  17. Garlic pods 7-8
  18. Curry leaves few

Instructions

  1. First wash Tur dal well. Next, in a cooker add the washed Tur dal, pour water, add turmeric, chopped green chillies, chopped onions, chopped tomatoes, dried moringa leaves, tamarind and cook till the cooker lets out 5 whistles.
  2. Check if the dal is cooked and soft. Drain excess water leaving sufficient water to mash the dal well for a flowing consistency. Add salt as needed before the dal is mashed and grounded well.
  3. Add some water that was earlier drained into a vessel into the mashed dal for increasing the quantity and for improving the consistency.
  4. In a different vessel, prepare tempering for the dal by first heating the oil in the vessel and now adding urad dal, mustard seeds, cumin seeds, fenugreek seeds.
  5. Now add chopped onions, garlic pods and curry leaves. Once the onions are a little brown add this tempering to the mashed Moringa dal. Moringa leaves dal is ready to be served with rice or phulkas as you like it…
