Ingredients Serving: 3

  1. 200 gram eggplant
  2. 8 garlic cloves
  3. 4 green chillies
  4. 1/2 cup peanuts
  5. 2 tbsp oil
  6. 2 onions
  7. 1 mefium size chhoped onion
  8. 2 tsp red chilly powder
  9. 1 tsp coriander powder
  10. 1 tsp garam masala
  11. 1 tsp dry mango powder
  12. Salt to taste
  13. Fresh coriander leaves

Instructions

  1. TAKE A EGGPLANT OF 200 GRAMS AND GIVE 4 SLIT WITH A KNIFE
  2. INSERT 1 GREEN CHILLY AND 2 GARLIC CLOVES IN EACH SLIT
  3. BRUSH WITH OIL
  4. ROAST WITH A DIRECT FLAME
  5. REMOVE FROM HEAT AFTER 10-12 MINUTES
  6. BRUSH 2 TOMATOES WITH OIL
  7. START ROASTING
  8. PEEL THE SKIN OF EGG PLANT
  9. PUT THE ROASTED TOMATOES IN WATER AND PEEL THE SKIN
  10. MASH THE ROASTED EGGPLANT ALONG WITH TOMATOES
  11. TAKE 1/2 CUP OF PEANUTS AND CRUSH WITH A CHILLY CUTTER
  12. MAKE A COARSE POWDER
  13. HEAT 2 TBSP OIL IN A PAN
  14. ADD 1/2 TSP CUMIN , 1/4 TSP TURMERIC AND 1 MEDIUM CHOPPED ONION
  15. SAUTE TILL TRANSLUCENT BY ADDING SALT TO TASTE AND COARSE POWDER OF PEANUTS
  16. SATUTE FOR FEW SECONDS AND ROAST PEANUT POWDER ON SLOW FLAME
  17. ADD MASHED EGGPLANT AND TOMATO MIXTURE
  18. 2 TSP RED CHILLY POWDER , 1 TSP CORRIENDER POWDER
  19. 1 TSP GARAM MASALA
  20. 1 TSP DRY MANGO POWDER AND MIX TOGETHER
  21. EMPTY IN A BOWL AND SERVE WITH CORRIENDER LEAVES
